This Umbrian Style Chicken is a Northern Italian version of Chicken Cacciatore, and is tomato-free for you nightshade avoiders. In the recipe this was inspired by, the author insists on using olives with pits, referencing the woody flavor they add. I’m not sure how much flavor they really add, so it’s your call if you want to use olives with pits or without. Just make sure your crew knows if there are pits in them before they dig in!
