Yield: 2 servings

Ingredients:

2 salmon fillets
1/2 tsp cumin
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1 avocado
1 red onion, finely chopped
1 tbsp avocado oil + some for your baking pan
2 tbsp lime juice
2 tbsp fresh cilantro, chopped
salt & pepper to taste
Directions:
  1. Combine the avocado, red onion, 1 tbsp avocado oil, lime juice and cilantro in a bowl.
  2. Cover with plastic wrap and refrigerate for a few hours. Not necessary, but it tastes better the longer it sits.
  3. Preheat oven to 400.
  4. Grease your baking pan with some avocado oil.
  5. Rub the salmon fillets with cumin, paprika, onion powder, and garlic powder.
  6. Place on the baking pan and in the oven for about 20 minutes.
  7. Serve with the avocado salsa and a side salad. Enjoy!
