Yield: 8 servings

Ingredients:

3 large eggs (room temperature)
1/2 cup almond milk (room temperature)
1/2 cup arrowroot powder
1 teaspoon sea salt
1/2 teaspoon freshly ground pepper
2 tablespoons unsalted butter, melted
1/2 cup chicken or beef drippings (or broth/stock), divided (room temperature)

Directions:

  1. Add eggs, milk, arrowroot powder, salt, pepper and butter in your blender.
  2. Then add in 1/4 cup of your drippings or broth and blend again.
  3. Let sit for about 20-30 minutes or until your oven preheats.
  4. Preheat oven to 400 degrees F.
  5. Take a 9×13 glass baking dish and pour 1/4 cup of your drippings/broth and place in the oven. You want the dish nice and hot before adding the batter.
  6. Once the drippings are really hot carefully add the batter into the prepared pan.
  7. Bake for 30 minutes or until the top is puffy and brown and the middle looks cooked through.
  8. Remove from the oven, cut into slices and serve immediately.
