INGREDIENTS:
Crust
½ Cup Coconut oil, melted
2 Eggs
¼ Teaspoon Salt
¾ Cup Coconut Flour
2 Tablespoon Raw Honey
 
Filling
4-6 Cups Strawberries, Hulled and cut in half. (If your berries are smaller, use closer to 6 cups.)
3 Tablespoon Maple Syrup
2 Tablespoon Raw Honey
Juice of ½ Lemon
½ Tablespoon Arrowroot Powder
2 Tablespoons Grass Fed Gelatin
 
DIRECTIONS:
For the Crust
  1. Preheat oven to 400 degrees. 
  2. In a medium bowl beat coconut oil, eggs, honey and salt together with a fork. 
  3. Then add coconut flour. 
  4. Stir until dough holds together.
  5. Gather the dough into a ball, transfer to a greased pie dish and slowly pat down until your crust has been hand-formed. You could use a 9”, 9.5” or 10” pie pan for a thinner crust. 
  6. Prick the dough with a fork. 
  7. Bake for 10 to 12 minutes. 
  8. Let cool completely before filling.
For the Filling
  1. In a small saucepan, heat 2 cups of halved strawberries, raw honey, maple syrup and lemon juice over medium heat. 
  2. Once it comes to a boil, reduce heat to low and simmer for 5-10 minutes.
  3. In a large mixing bowl, fill the remaining strawberries. 
  4. With a slotted spoon, remove the berries from your sweet sauce and add them to remaining strawberries.
  5. Allow the sweet sauce to cool for around 5-8 minutes.
  6. When using gelatin, it sets fairly quickly and so you have to work quickly. 
  7. Once your sweet sauce is still very warm to the touch but not piping hot, stir in arrowroot, whisking it well. 
  8. You may need to put the saucepan back on the stove and turn to simmer for a moment. 
  9. Slowly add one tablespoon of gelatin at a time, thoroughly whisking in. You do not want to do this more than 2 minutes at the most as it will start to set up immediately. 
  10. Remove from heat and slowly pour over bowl of berries. 
  11. Stir to incorporate all ingredients evenly.
  12. Carefully pour filling into cooled pie crust. 
  13. Cover and place in refrigerator and serve chilled.
  14. For best results, allow assembled pie to chill for at least 1-2 hours before serving. 
  15. If you are in a hurry to serve it, sometimes putting it in the freezer for half an hour helps.
  16. Garnish with homemade raw whipped cream, if desired.
