Ingredients:

1 T rinsed, chopped capers
2 chopped artichoke hearts
1 stalk of celery, chopped
1/4 t grey sea salt
Zest of 1 lemon
3 T chopped tarragon
1/2 C mayonnaise
1 lb diced chicken

Directions:

  • Mix all ingredients except the chicken to create the sauce
  • Pour sauce over chicken and mix; It should barely hold together
  • Adjust mayo and seasoning as desired
