Ingredients:
3/4 C Sugar
1/3 C All-purpose Flour
1/4 t Salt
2 C Milk
3 Slightly Beaten Egg Yolks
2 T Butter
1 t Vanilla
1 9 inch Baked Pastry Shell
Directions:
- In a saucepan, combine sugar, flour, and salt
- Gradually stir in milk
- Cook and stir over medium heat until bubbly
- Cook and stir 2 minutes
- Remove from heat
- Stir small amounts of the hot mixture into yolks
- Immediately return to hot mixture
- Cook 2 minutes stirring constantly
- Remove from heat
- Add butter and vanilla
- Pour into cooled, baked pastry shell.
(To prevent a skin from forming on the surface of the filling, put waxed paper directly on the top of the hot filling)
