Ingredients:

1 C Sugar
2 oz Chopped Unsweetened Chocolate
1/3 C All-purpose Flour
1/4 t Salt
2 C Milk
3 Slightly Beaten Egg Yolks
2 T Butter
1 t Vanilla
1 9 inch Baked Pastry Shell

Directions:

  • In a saucepan, combine sugar, flour, and salt
  • Gradulally stir in milk
  • Add chopped unsweetened chocolate
  • Cook and stir over medium heat until bubbly
  • Cook and stir 2 minutes
  • Remove from heat
  • Stir small amounts of the hot mixture into yolks
  • Immediately return to hot mixture
  • Cook 2 minutes stirring constantly
  • Remove from heat
  • Add butter and vanilla
  • Pour into cooled, baked pastry shell.

(To prevent a skin from forming on the surface of the filling, put waxed paper direclt on the top of the hot filling)
