Yield: 6 Servings

Ingredients:

2 lb. ground beef
1/2 c. almond flour
2 large eggs
1 tbsp. coconut aminos, divided
1/2 c. paleo or fodmap ketchup

Directions:

  1. Preheat oven to 350°.
  2. In a large bowl, mix together beef, almond flour, eggs, 1 tablespoon coconut aminos, and ketchup.
  3. Season with salt and pepper, plus other seasonings as desired.
  4. Press beef mixture into prepared pan.
  5. Brush more ketchup all over meatloaf.
  6. Bake until meatloaf is cooked though (about 1 1/2 hours).
  7. Let cool at least 15 minutes before removing from pan and serving.
