Yield: 4 servings

INGREDIENTS:
6 zucchini
2 teaspoons salt
3 tablespoons olive oil
1 clove garlic, minced (optional)
salt and black pepper to taste
1/4 cup grated Parmesan cheese

DIRECTIONS:

  1. Cut zucchini into thin, noodle-like strips (a mandoline works well for this).
  2. Toss with the 2 teaspoons salt, and place in a colander to drain for 30 minutes.
  3. Bring a pot of water to boil.
  4. Add zucchini; cook for one minute.
  5. Drain; rinse immediately with cold water to stop cooking.
  6. Heat olive oil in a large skillet over medium high heat.
  7. Add zucchini and garlic; cook and stir until just tender, about 5 minutes.
  8. Season to taste with salt and pepper.
  9. Sprinkle with Parmesan cheese.
