Ingredients:
Prime Rib (1 bone serves 2 people)
Butter
Salt
Pepper
Directions:
- It is crucial that the roast come to room temperature to ensure even cooking. Take the roast out of the refrigerator two hours before cooking.
- Preheat oven to 450 degrees
- Rub butter in the ends of the roast
- Sprinkle the roast liberally with salt and pepper.
- Place the roast in a heavy metal roasting pan, bone side down.
- Regardless of the size of the roast, cook the roast for 15 minutes at 450.
- Cooking time for rare roast (120 degrees)
- 3 ribs, 7-8 lb.s, 15 minutes at 450, then 1 1/4 to 1 1/2 hours at 325 degrees
- 4 ribs, 9-10 lb.s, 15 minutes at 450, then 1 1/2 to 2 hours at 325 degrees
- 5 ribs, 11-13 lb.s, 15 minutes at 450, then 2 to 2 1/2 hours at 325 degrees
- 6 ribs, 14-16 lb.s, 15 minutes at 450, then 2 3/4 to 3 hours at 325 degrees
- 7 ribs, 16-18 lb.s, 15 minutes at 450, then 3 to 3 3/4 hours at 325 degrees
- Use a meat thermometer about 30 minutes before the expected end of the roasting time. Insert the thermometer in the thickest part of the roast, not touching fat or bone.
- When the internal temperature reaches 120 degrees, remove the roast and cover with aluminium foil for 20-30 minutes. It will continue to cook during this period.
