Yield: 8 muffins
 
Ingredients:
4 eggs
zest of one lemon
3 tablespoons lemon juice
1/4 cup ghee or coconut oil, melted
1/4 cup honey
1 teaspoon vanilla extract
1/8 teaspoon salt
1/3 cup coconut flour
1/2 teaspoon baking soda
1 tablespoon poppy seeds
 
Directions:
  1. Preheat oven to 350 degrees.
  2. Grease or line muffin tin.
  3. Add all ingredients except poppy seeds to food processor and process until well combined.
  4. Pulse in poppy seeds.
  5. Bake 25-30 minutes until golden brown and toothpick inserted in center comes out clean.
  6. Cool completely on wire rack.
